48-Inch Viking Range With a Dead Griddle

A cold plate on a working range
In the bigger Talus and Highlands kitchens, the 48-inch Viking is often the range someone chose for its griddle, and a griddle cooked on a few times a month is the part of the range that sits longest with grease and damp beneath it. When it stops heating, everything else on the range is usually still sound, and that is the first thing that settles the question.
Which part has failed
Under the plate the griddle runs on three parts of its own: a burner, something to light it and a control that holds the heat you set. A plate that stays cold with its knob turned up points first at the griddle igniter. A plate that lights and then runs too hot, or never reaches the setting, points at the griddle thermostat. A corroded burner is rarer and shows as a patchy flame once the plate is up. The technician tests them one after another, and nothing is ordered until the failed part is named.
When the griddle is not the whole story
A dead griddle turns into a replacement question only when it is one line on a longer list, such as a weak oven, stiff knobs or burners that tick for ages before lighting, or when the part it needs is no longer made. Before you decide
Can I keep using the burners while the griddle is out?

Should I re-season the griddle plate before calling?
Only if the plate heats but food sticks to it. Seasoning changes how the surface cooks, not whether the burner underneath lights.
